MASALA CHAI

SERVES 4

3 teaspoons English breakfast loose leaf tea

6 green cardamom pods

6 black peppercorns

4 cloves

1 cinnamon stick

2.5-cm/1-inch piece ginger, peeled and finely grated

250 ml/9 fl oz full-fat milk

sugar or jaggery, for sweetening

Bring 500 ml/18 fl oz water to the boil in a saucepan, add the tea, green cardamoms, black peppercorns, cloves, cinnamon and ginger and continue to simmer over a medium heat for 2 minutes.

Add the milk and simmer for a further 5 minutes. Remove from heat and stir in sugar or jaggery to taste. Strain through a fine sieve and serve hot.
